"Ravioli
di ricotta"
INGREDIENTS
For 4 servings:
1 Kg flour
500 gr ricotta
400 gr sugar
200 gr lard
200 gr zuccata (candied pumpkin; typical of the Sicilian
confectionery art)
200 gr chocolate
icing sugar
cinnamon.
knead
the flour with the lard, a little salt and a little
warmish water. Roll out the dough and divide it into
2 equal sheets. Prepare a cream with the ricotta, the
sugar, the chopped zuccata and the minced chocolate.
Divide the cream by little piles on one of the pastry
sheets. Cover it with the other pastry sheet and cut
out some big ravioli. Fry them in abundant boiling oil
and sprinkle with sugar and cinnamon.
