"Meatloaf
Sicilian Style"
INGREDIENTS
For 4 servings:
300 Gr. Minced beef boneless meat
1 slice of boneless beef (1/2 Kg ) soft part of bread
2 eggs
milk
grated pecorino
parsley
2 hard boiler eggs
100 gr minced salami
diced caciocavallo cheese
lard
a little of red wine
1 spoonful of tomato sauce
salt
pepper.
Mix the
minced beef with the soft part of bread (previously
dipped in the milk, and squeezed) the 2 egg yolks, a
little pecorino, parsley, salt and pepper. Spread the
sliced beef on the table and sprinkle with salt. Spread
on it the mixture already prepared and after the sliced
hard boiled eggs, the salame and the caciocavallo. Roll
up the meat and tide it up with strings. Brown the onion
with the lard in a pan. Add the meat. Turn it often,
season with salt and pepper and Sprinkle with a little
red wine. Add the meat sauce sprinkled with their same
sauce.
