"Fried
pilchards"
INGREDIENTS
For 4 servings:
1/2 kg. Pilchards
100 gr anchovies
parsley
oregano
lemon juice (1/2 lemon)
flour
1 beaten egg
breadcrumb
oil.
Cut off
the pilchards heads, open them ventrally and bone them
(but do not divide the two halves). In a bowl mix together
the boned minced anchovies, parsley, oregano, a little
oil and the lemon juice. Arrange the washed pilchards
on a plate and cover them with this sauce for 1 hour.
Then cover the Pilchards with flour, dip them in the
beaten egg and crumb. Fry them in abundant hot oil and
serve warm.
