"Falsomagro"

INGREDIENTS

For 4 servings:
1 rectangular-shaped veal rumpsteak (800 Gr.)
200 gr ham
200 gr pork sausage
4 hard boiler eggs
100 gr bacon fat
80 gr minced meat
1 onion, 1 beaten egg
1 clove of garlic
100 gr hot caciocavallo cheese
60 gr grated pecorino cheese with peppercorn
parsley
80 gr boiler peas
tomato sauce
lard
red wine
oil salt
pepper.

Spread the rumpsteak on a plane surface. Arrange on it the ham, the hard boiled eggs, the bacon fat, the caciocavallo, parsley, garlic, onion, the minced beef (mixed to the egg and to the pecorino cheese), the peas and the sausage. Roll up the meat and tide it with strings. Brown the meat with some oil, pour some red wine and let it evaporate), the tomato sauce, let it cook, open, for 1 hour. Before serving, remove the strings, slice and spry with the cooking sauce.
