INGREDIENTS
For 4 servings:
250 Gr thinly sliced swordfish
150 gr swordfish scraps
100 gr hot provolone cheese
100 gr breadcrumbs
2 eggs
1 onion
basil
parsley
oil
salt
pepper.
Brown
in the oil the sliced onion and the chopped swordfish
scraps, adding basil and breadcrumbs. Then purée
the browned onions and swordfish and add the diced provolone,
the whole eggs, salt and pepper. Mix and put this mixture
on the swordfish slices. Roll them up forming roulades
and grill. Serve with Salmoriglio sauce (oil, lemon
juice, salt, pepper, garlic, parsley, oregano; minced
and mixed together. It is a traditional Sicilian seasoning
for grilled fish).
