"Cassata
Siciliana"
INGREDIENTS
For 4 servings:
500 gr ricotta
300 gr icing sugar
150 gr assorted candied fruit
150 gr sponge cake
100 gr plain chocolate
vanilla
rum.
Slice
the sponge cake and line the bottom and the sides of
a pie-dish with it. Sieve the ricotta and mix it to
the sugar and the vanilla. Add ½ little glass
of rum, the minced chocolate and the minced candied
fruit. Pour the mixture in the line pie-dish, level
with a knife and cover with more sponge cake slices.
Put in a cool place for 1 hour, then turn the “cassata”
upside down on a plate, sprinkling with icing sugar.
