"Aubergines
Parma Style"
INGREDIENTS
For 4 servings:
1 Kg aubergines
200 gr onions
150 Gr. Tomato sauce
150 Gr. grated parmesan cheese
fresh basil leaves
50 Gr grated parmesan cheese
fresh basil leaves
50 Gr mozzarella
2 hard boiler eggs
olive oil
salt
pepper.
Cut the
aubergines lengthwise, by slices of 2 cm thick. Dip
the slices in salted water for a while. Fry them in
abundant oil. Fry the sliced onion too. Put in an oiled
pan the half of the aubergines, and the half of the
parmesan. Cover with the remaining aubergines; on the
top put the remaining parmesan and a little tomato sauce.
Half way through the cooking decorate with mozzarella
and hard boiled eggs.
